Just in time for tailgate season and any time you want to celebrate your love of beer and cheese, Chef Jill Holland shares her "Hourglass Full of Hope Beer Cheese Dip" recipe made in collaboration with local Orlando craft brewery Hourglass Brewing in Longwood, FL.
This creamy beer cheese dip is perfect to dip crusty bread or soft pretzels (get some from Olde Hearth Bread Company, one of our proud retail partners), over nachos, or to slather on burgers and sandwiches.
The beer cheese recipe highlights the limited edition Koelschip cooled steam lager created by Hourglass Brewing, made with our A Spoon Full of Hope Orange Blossom Honey.
Hourglass Brewing's SMaSH Beer Festival 2021 release using A Spoon Full of Hope Orange Blossom Honey was unveiled in January 2021. Described by Head Brewer Mike DeLancett as "an exceptionally smooth Koelschip cooled steam lager generously doused with drizzling gobs of A Spoon Full of Hope Orange Blossom Honey. We used Yakima Quality Cashmere Hops to deliver fragrant notes of spiced sap and swirling sweet lemon-lime citrus. We also roasted Baird’s 1823 Heritage Collection London Lager Malt to add flourishes of golden biscuits and freshly baked bread. To achieve a subtle caramel finish, the honey steam lager was rested on cracked honeycomb toffee that was made with that same irresistible honey."
Hourglass Full of Hope Craft Beer is available for a limited time at both Hourglass Brewing locations to enjoy in their taproom or pick up a four-pack to bring home. Proceeds benefit Second Harvest Food Bank of Central Florida’s Culinary Training Program.

HOURGLASS FULL OF HOPE BEER CHEESE DIP RECIPE
- 3 Tbsp unsalted butter
- 1.5 oz flour
- 1 cup 2% milk
- 1 cup Hourglass Full of Hope Lager
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 cup shredded medium sharp cheddar
- ½ cup shredded Swiss
- ½ cup shredded mozzarella
- 1 Tbsp whole grain mustard
- Melt butter over medium heat and whisk in flour. Cook for 1 -2 minutes whisking frequently.
- Slowly add milk, whisking constantly to smooth out any lumps, then slowly add Hourglass Full of Hope lager. Continue whisking.
- Add cheeses one handful at a time, whisking and adding more once the previous handful has melted and is smooth.
- Mix in whole grain mustard.
- Enjoy with pretzel bread, sourdough, veggies, nachos, loaded fries, or over pasta.
